the officer is level 18-26 i believe, and they use a cutlass i think ( i think i seen em doing flourish at least anyways, been awhile and i have a memory span of a goldfish)

and yes they are occasionally on the man o wars.

Officer (navy) can be found on Kingshead, royal caverns (port royal) or Lord becketts quarry (padres)
Grunt (EITC) (use's dagger)
and I know that there exist :
Hired-Gun (EITC)
Mercenary (EITC)
Assassin (EITC)
and i think that there is a Dreg or something like that in tormenta cave (level 22)

Yep, there is A dreg. Only at the first entrance. There is a mercenary quest for this as well.

I think you should list the scorpians, bats, etc as Type: Animal

Stumps and Fly traps, etc should by Type: Plant.

Maybe you should list the Isla Tormenta creatures as Type: Davy Jones Crew.

The only place I have seen an Assassin is in the Kingshead jail. Usually lvl 34+, dagger users. Not sure which are in the Padres Del Fuego 2nd cave entrance.

There are assassins in Beckett's Quarry on PDF.
