Sven Osymthe already answered the other questions but I will add a little more info.

1) To get non light ships, you have to be sailing level 5.(Every pirate starts out with a Light sloop.) The ships available are the Light Sloop, Light Frigate and the Light Galleon.( You can buy the light ships once you have enough gold saved.) Once you are sailing level 5, you can buy a Sloop, Frigate and a Galleon. As Sven said , at sailing level 15 you can buy War Sloop, War Frigate and War Galleon ships. If you have enough gold saved up it will tell you have "Enough gold to buy this ship...".
6) To look at your profile, click on the center of the key. It should say Norietory # and you can see what levels everything is. On the right side of your pirate profile, there is an arrow. This shows all of levels for everything. (Sailing , cannoning and weapons.) Also your level is by your pirates name.
