I'd kill them for ink but I plan on making an exhibit section of my world and they're in the perfect spot right now. If they don't die and I can block them off in a small aquarium, then this first world is set for an exhibit. I knew the hardest part would be squids so if I have them in an area where they'll live forever, then this makes my day.
I've looked around the net and no one has really answered this question. I know mobs and zombies die but I've never been sure about squids.

Based on my experiences with squids, they will die eventually, but more should spawn in their place.
Also has anyone ever seen a legit pink sheep? Since they were added I have seen only 1 of them. Seems the rarest mobs are Pink Sheep, Spider Jockeys and Slimes. Found a legit slime at the bottom of my missle silo a few days ago.
Also since Better than wolves mod hasn't updated I was forced to make a second world. I named it Lulzville and so far I used World edit to make a 50 by 40 hole in the ocean and am now making an underwater city. Coming along nicely and with Mo' creatures I get a chance to look at underwater life while I build
