Ever since the first day I sailed with Maximvs, I've played with the graphics options, before making any rash conclusions. The health meter is gone about 85% of the time, now. The last few times I tried SvS, I left after being sunk by single invisible shots from invisible ships. But even in those short times, it was clear that the health meter doesn't work at all, in SvS anymore. High low and medium all have health meters that sometimes show up when I use ramming speed, then disappear before I can fire a broadsides.
