Personally, I like to have all three war ships for the optons and for the collective aspect.
The first war ship I'd buy is a war galleon. Great broadsides and great cargo hold which will help you quickly gain the gold needed for another war ship. I always use my war galleon to go plundering.
Afterwards buy either a war sloop or a war frigate (war sloop will obviously be easier to acqure the funds for, but maybe you're a saving type.) Use the war sloop to quickly travel from island to island for when you just need to get somewhere and don't need/want to go plundering on the way. Other than that it is fairly useless to be honest.
War frigate is the best ship for PvP. It is reasonably swift, has decent broadsides, has good armour and great cannons for your crew to shoot down those pesky French/Spaniards. It's a good balance between the War Sloop and the War Galleon.
