You know what would be nice? A crow's nest. That way you can see boats all around without one of those big sails in the way.

Agreed. To take the idea one step further, adding a skill tree related to a "lookout" position. Things like a telescope to see further ahead than the other people on the ship, maybe an accuracy benefit for the crew from the person crewing the crow's nest, and so on.

Being able to open the doors on ships would be a start as well.
