Shooting the mast I don't think has changed from what I have seen. Just need to get away from land a bit, and one shot on the ship turns it to approach you, then its a easy line up on taking down the masts stage by stage.

Using lower level cannon balls like round shot builds rep faster, if you don't hit the mast enough times with something like lightning.
