This topic has had a bunch of threads and comparisons. They all come to personal taste and playing styles. I like to sail alone so I use W. Galleon the most. I can carry more too. Besides I am really good on all three.

any ship works
you can use any ship, in privateering i can sink a war frigate with my light sloop by staying directly behind the ship or in on eof the other blindspots which vary from ship to ship

I prefer galleons because their broadsides aren't really that far apart, and they have more cargo/broadsides
Of course, if I want a full comlement of crewmates War Frigate it is
